YOU WILL ALSO NEED: Unsalted butter, eggs.
RECIPE TIME: Prep 1 hour 20 mins, bake 30 mins, plus cooling and refrigeration time.
SPECIAL EQUIPMENT: Stand mixer with paddle attachment or hand mixer recommended, standard 12 cup cupcake pan.
METHOD: This recipe is a three step process; the cupcakes, the buttercream icing and the rocky road. The cupcakes are a melt and mix recipe. The buttercream icing requires creaming of the butter and icing sugar. You can leave this step out, but it helps the rocky road stick to the cupcake. To make the rocky road, simply chop the ingredients and mix through the melted chocolate.
